It'd be bad. At least, I think it'd be bad. Regina's evil is pretty implicit even with the ripping hearts out, but they've been keeping it PG implicit. Rumplestiltskin... it'd be bad. It'd be really bad.
I'm inclined to agree, although admittedly we haven't seen him make any contracts with anyone he'd be inclined to let go of. He doesn't seem to have much respect or care for the people he makes deals with, and he damn well has it out for Regina. If Snow wanted out of a contract, though. And he traded her awfully lightly for her deal. ... or he could release her by making a different deal with her, trading her her freedom for something she'd be more happy to give? Which would be a little bit in line with the story, at least, letting her go in spirit more than in letter of contract.
She could still be the town librarian! Just a very meek and quiet one. ;)
